Easy, Freezer-Friendly Quiche Recipe

At a recent freezer meal swap I attended, my pal Meg made quiche. I was kind of surprised because I had no idea that quiche would freeze well! After heating it up and trying it, I was convinced.
This week at Albertsons, you can buy a dozen eggs for $0.98 with the in-ad coupon (limit 2), and Jimmy Dean sausage is also on sale (3 for $10 with in-ad coupon – plus there is a $0.55/1 manufacturer’s coupon you can stack).
I decided to go with these on-sale items and recreate a version of Meg’s delicious quiche to share with you today. {Note: The Albertsons sale is no longer going on, but this recipe is still delicious!}
Since this is a freezer-friendly recipe, I thought I’d give you the instructions for how to make TWO at once – enjoy one now and pop one in the freezer for later.

Ingredients
- 1 package deep dish pie shells, 2 ct – I used Essential Everyday
- 6 eggs
- 2 cups of half and half
- ¼ cup flour
- ½ tsp salt
- ¼ tsp ground pepper
- ½ tsp dry mustard
- Ground sausage, browned & drained – I used 1 roll of Jimmy Dean Sage Sausage
- 1 cup shredded cheese – I used cheddar because it’s what I had, but Meg used feta which was also awesome
- ½ cup sundried tomatoes, chopped
- Fresh herbs to taste (optional) – I used parsley because it’s what’s in my garden, but Meg used fresh basil and oregano
First, preheat your oven to 375°.
Start by whisking your eggs in a large bowl.
Add the 2 cups of half and half, flour, salt, mustard, and pepper. Add the sausage, sun-dried tomatoes, cheese, and herbs.
Divide mixture evenly into the pie crusts. For the quiche you are going to bake now: bake for about 40-50 minutes, until thoroughly cooked and a knife comes out clean. For the quiche you are going to freeze: add plastic wrap and then heavy-duty foil. Label and freeze. When you want to cook it, remove the plastic and foil and bake.
This quiche is so easy to assemble and it’s just delicious! If you’re picking up some of the sale items at Albertsons this week – such as the $0.98 eggs – it can become a frugal meal too. I also love that recipe can be served for breakfast, lunch, or dinner!
