Slow Cooker Manicotti Recipe | Easy, Delicious Family Recipe Idea!

I love slow cooker meals! I’m sure you know that by now. I especially love them when life is crazy busy…and lately, it’s been crazy busy. This is one of my absolute favorite meals for the slow cooker.

Get it all together the night before and tell the hubby or whichever teenager might be around to start it up and BAM – dinner is already cooking before I get home.

Here’s what you’ll need:

  • 1 – 8 oz package manicotti
  • 1 – 15 oz container part-skim ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/4 cup parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups spaghetti sauce (divided)

Pour 1/2 cup of spaghetti sauce into the bottom of your slow cooker. Don’t forget to use your slow cooker liner if you have one!

Mix ricotta cheese, 1 1/2 cups mozzarella cheese, Parmesan cheese and seasonings in a bowl until blended.

Scoop cheese mixture into a gallon size Ziploc bag. Snip the corner about a half inch.

Gently fill each manicotti with your cheese mixture.

Arrange manicotti in your slow cooker. I usually stand them on their sides; I seem to fit them better that way.

Cover with remaining spaghetti sauce and cook on high for 2 hours. Times may vary depending on your slow cooker, so check to make sure it isn’t too dry. Add remaining mozzarella cheese for the last 30 minutes.

Serve with garlic bread and a side salad and there you go – an easy Italian dinner the whole family will enjoy!
