Southwest Chicken Burritos Recipe | The Coupon Project

One way you can save money on your groceries is to plan meals based on what you’re finding on sale for a given week. Last week, I shared with you about some hot deals I spotted at Albertsons:

I picked up $1.79/lb boneless, skinless chicken breast; buy one, get one free tortilla, and Essential Everyday refrigerated salsa for $1.69. I also found Sargento shredded cheese for $1.69 and Essential Everyday frozen vegetables for $1.

I thought about all these items and it occurred to me: of course, burritos!

Today’s recipe will really stretch those ingredients into several meals as you’ll soon see, too!

Ingredients:

  • 2 lb boneless, skinless chicken breast
  • 1 cup prepared salsa, such as Essential Everyday
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1/2 cup light sour cream, such as Essential Everyday
  • 1 cup shredded cheese (I chose a Mexican blend)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste
  • 10-12 soft taco size tortillas

Start by setting your oven to 350°.

Bring a big pot of water to a boil and add in your chicken breasts. This is actually one of my favorite methods for cooking chicken! It’s fast and easy. Let them cook for about 15-20 minutes until they are no longer pink inside.

While the chicken is cooking, mix your salsa, beans, corn, cheese, and sour cream in a large bowl.

When your chicken is done, shred it using two forks. Incidentally, you could use the shredded chicken as a base for many recipes including pulled barbecue chicken sandwiches, chicken salad, chicken casseroles, chicken soups, chicken tacos… there are really so many options.

For our recipe today though, you’ll just add it to the bowl of previously-mixed ingredients. Season with the cumin, garlic, salt, and pepper.

Place a heaping scoop of the chicken mixture in the middle of a tortilla and roll tightly.

Repeat the process, placing each tortilla in a lightly-greased baking dish. Bake for about 15-20 minutes until heated through and the tortillas are crisp. Serve immediately.

Now, I made five in one baking dish, but since I had enough mixture left over, I thought I’d put a couple freezer meals together.

These burritos are quick, easy, and delicious! They are also inexpensive to put together, particularly if you’re hitting up a good sale!
